Ingredients
– 20 oz cheese tortellini, uncooked (approximately 5 cups uncooked)
– 10 oz cherry tomatoes, halved
– 8 oz Mozzarella pearls
– 1 cup chopped spinach
– 1/4 cup chopped basil
– 1/2 cup olive oil
– 2 T balsamic vinegar
– 3–4 garlic cloves, minced
– 3/4 tsp Italian seasoning
– 1/2 tsp salt
– 1/2 tsp pepper
– Balsamic glaze (optional)
Instructions
- Cook the cheese tortellini in a large pot of boiling water according to package instructions until al dente. Drain using a colander.
- Rinse the tortellini with cool water to stop cooking and transfer it to a mixing bowl.
- Add chopped spinach, halved cherry tomatoes, mozzarella pearls, and minced garlic to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture and toss well.
- Chill until ready to serve. Drizzle with extra olive oil and balsamic glaze just before serving.
