  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves (minced)
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. Cook the cheese tortellini in a large pot of boiling water according to package instructions until al dente. Drain using a colander.
  2. Rinse the tortellini with cool water to stop cooking and transfer it to a mixing bowl.
  3. Add chopped spinach, halved cherry tomatoes, mozzarella pearls, and minced garlic to the bowl.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture and toss well.
  5. Chill until ready to serve. Drizzle with extra olive oil and balsamic glaze just before serving.
