  • â…” cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 large eggs (room temperature)
  • 1 tablespoon vanilla extract
  • 1½ cups semi-sweet chocolate chips
  • ½ cup mini semi-sweet chocolate chips (optional for topping)

Instructions

  1. Preheat your oven to 350°F and prepare two greased 8×4 inch loaf pans lined with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In a medium bowl, mix canned pumpkin, brown sugar, granulated sugar, applesauce or oil, eggs one at a time, and vanilla extract until well combined.
  4. Gradually fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Gently fold in the semi-sweet chocolate chips and reserve some mini chips for topping if desired.
  6. Divide the batter evenly between the prepared pans and bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in pans for about 10 minutes before transferring to a wire rack to cool completely.
