  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup plain Greek yogurt
  • 1 tablespoon minced garlic
  • Fresh dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound the chicken breasts to about 1/2 inch thick and marinate in the mixture for at least 30 minutes.
  3. Prepare the tzatziki by combining Greek yogurt with grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill; refrigerate.
  4. Cook rice or quinoa as per package instructions while chopping vegetables.
  5. Preheat an air fryer to 380°F and cook marinated chicken for about 10 minutes until fully cooked or pan-fry until golden brown.
  6. Let the chicken rest for five minutes before slicing and assembling your bowls with rice/quinoa as the base topped with vegetables and tzatziki.
