  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • 2½ cups chicken broth
  • 1 tbsp olive oil
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets (or 2 cups frozen, thawed and patted dry)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • Optional Seasonings:
  • ½ tsp dried thyme
  • ½ tsp garlic powder
  • 1 cup Ritz crackers (crushed)
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, melt butter over medium heat. Add chicken and season with Italian seasoning, salt, and pepper. Cook until browned (5-7 minutes for fresh chicken).
  3. Stir in chicken broth, olive oil, uncooked rice, and broccoli until well combined.
  4. Mix in cream of chicken soup, milk, sour cream, and half of the cheddar cheese until smooth.
  5. Pour into a greased baking dish and spread evenly.
  6. Combine crushed Ritz crackers with remaining cheese and melted butter; sprinkle over the casserole.
  7. Bake uncovered for about 40 minutes until bubbly and golden brown.
