  • 2 TBSP curry powder
  • 1 cup unsweetened full-fat coconut milk

Instructions

  2. Sauté diced onion until tender, about 3–5 minutes.
  3. Add ginger and garlic; cook for an additional 2–3 minutes until fragrant.
  4. Stir in potatoes, carrots, crushed cashews, and tomato sauce; combine well.
  5. Season with salt and curry powder; mix thoroughly to coat.
  6. Cook for about 15 minutes until potatoes are tender.
  7. Incorporate peas, bell peppers, and coconut milk; stir well.
  8. Reduce heat to low and simmer covered for 10–15 minutes to meld flavors.
  9. Serve hot with rice or cauliflower rice.
