  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1 large eggplant (chopped)
  • 6 oz fresh spinach (roughly chopped)
  • Vegan cheese sauce (or store-bought vegan cheese)

Instructions

  1. Gather all ingredients and tools: knife, cutting board, mixing bowl, spatula.
  2. Heat oil in a non-stick skillet over medium heat. Sauté the diced onion until translucent (about 3 minutes).
  3. Add chopped eggplant, minced garlic, balsamic vinegar, soy sauce, red wine, and spices to the skillet. Cook covered for 12-15 minutes until tender.
  4. Stir in spinach and cook for another minute until wilted.
  5. Prepare vegan cheese sauce if making homemade.
  6. Assemble quesadillas by layering filling and cheese between tortillas in a greased skillet.
