Description

Indulge in the exquisite delight of Vegan Chocolate Mousse with Aquafaba, a dessert that perfectly balances rich flavor and light texture. Made with just four simple ingredients, this airy mousse is not only vegan but also an impressive treat for any occasion—from dinner parties to cozy nights at home. The unique addition of aquafaba, the liquid from chickpeas, creates a fluffy consistency that mimics traditional mousse without the use of eggs or dairy. Paired with rich dark chocolate, this dessert is both satisfying and guilt-free.

Ingredients

Scale
  • 1 cup aquafaba (chickpea water from 1 14 oz can of chickpeas)
  • 7 oz dark chocolate chips (54% cocoa)
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup

Instructions

  1. Drain the aquafaba from the can of chickpeas and reserve the chickpeas for another dish.
  2. In a mixing bowl, combine aquafaba, lemon juice, and maple syrup; stir gently.
  3. Use a stand mixer to whip the aquafaba until stiff peaks form, about 10 minutes.
  4. Melt dark chocolate in a double boiler until smooth.
  5. Carefully fold the melted chocolate into the whipped aquafaba using a spatula.
  6. Spoon mousse into individual bowls and refrigerate for at least 3 hours or overnight before serving.
