- 1 medium spaghetti squash
- 1 pound boneless, skinless chicken breast
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese

- 2 tablespoons sun-dried tomatoes
- Fresh spinach

- 1 teaspoon Italian seasoning
- 2 tablespoons butter
- 1 shallot (minced)

Instructions
- Pierce the spaghetti squash several times and microwave on high for 8-12 minutes until tender. Let it cool.
- Season chicken with salt, pepper, and Italian seasoning.
- In a large skillet, melt butter over medium-high heat and cook chicken until no longer pink (about 7 minutes). Remove and keep warm.
- Sauté garlic and shallots in the same skillet for 1-2 minutes.
- Add sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and heat until bubbly (1-2 minutes).
- Stir in Parmesan cheese and spinach; add back cooked chicken.
- Once squash is cool, cut in half, remove seeds, and scrape out strands with a fork.
- Combine spaghetti squash with the creamy chicken mixture.
