  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan.
  3. In a large bowl, mix soy milk and vinegar; let sit for five minutes. Then add canola oil, applesauce, and vanilla.
  4. In another bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Stir in boiling water until smooth; the batter will be thin.
  7. Pour batter into the prepared pan and bake for about 35 minutes or until a toothpick comes out clean.
  8. Cool on a rack before frosting.
