  • 1/4 tsp cream of tartar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a mixing bowl, whisk together melted coconut oil, eggs, sugar, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, cinnamon, cream of tartar, and salt.
  4. Gradually mix dry ingredients into the wet mixture and gently fold in the grated zucchini.
