Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cups shredded purple cabbage
  • 2 cups grated carrot
  • 4 scallions
  • 1 cup defrosted edamame
  • Peanut sauce (to taste)
  • Chopped cilantro for garnish
  • Crushed peanuts for garnish

Instructions

  1. Boil salted water in a large pot and cook noodles until al dente. Rinse with cold water.
  2. Prepare vegetables by slicing bell peppers and shredding cabbage. Grate carrots.
  3. In a large bowl, combine cooked noodles and all prepared vegetables.
