Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter (melted)
  • 2 packages cream cheese (16 ounces total)
  • 2 large eggs
  • ⅓ cup granulated sugar
  • 2 cups fresh strawberries (diced)
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar (packed)
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F. Line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press firmly into the bottom of the prepared dish.
  3. In a large bowl, beat together cream cheese, eggs, granulated sugar, vanilla extract, and salt until smooth. Spread over the crust.
  4. Evenly distribute diced strawberries on top of the cheesecake filling.
  5. For the crumble topping, whisk together flour, brown sugar, and salt in a medium bowl; stir in melted butter until crumbly. Sprinkle over strawberries.
  6. Bake for 35-40 minutes until set in the center. Cool completely on a wire rack before chilling in the refrigerator for one hour.
