  • 1 ½ teaspoons instant yeast
  • 200 grams sourdough discard (unfed)
  • 2 cups + 1 tablespoon all-purpose flour
  • 1 egg (lightly beaten)
  • 2 tablespoons melted butter
  • Fresh parsley or rosemary (chopped)
  • Garlic powder
  • Kosher salt

Instructions

  1. Combine warmed milk, yeast, and sugar in a stand mixer bowl. Add flour, sourdough discard, egg, herbs, salt, and garlic powder. Mix on low speed.
  2. Gradually add melted butter and mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for 3–4 minutes until smooth.
  4. Place in a greased bowl covered with plastic wrap; let rise for 60–90 minutes until doubled.
  5. Prepare the topping mixture by mixing softened butter with herbs and garlic powder.
  6. Divide risen dough into 12 pieces; flatten each, spread with topping, fold, and place in a greased loaf pan.
  7. Let rise again for 30–45 minutes; preheat oven to 350°F.
  8. Bake uncovered for 30 minutes; cover with foil and bake an additional 5–10 minutes until golden brown.
