  • 2 1/2 lbs baby creamer potatoes (halved)
  • 1 1/2 lbs beef smoked sausage (sliced)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 Tbsp olive oil
  • 2 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 4 Tbsp butter (cubed)

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 baking dish with nonstick spray.
  2. In a large mixing bowl, toss halved potatoes with olive oil and seasonings until well coated.
  3. Add smoked sausage, diced onion, and green bell pepper to the bowl; mix gently.
  4. Transfer mixture to the greased baking dish and dot with cubed butter.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until potatoes are fork-tender.
  6. Let rest for 5 minutes before serving hot.
