- 2 large eggs (room temperature)
- 1 cup whole milk
- 1/4 cup canola oil
- 1 can cream-style corn (14.5 oz)
- 3 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F.
- In one bowl, mix cornmeal, salt, baking soda, jalapenos, and onion. In another bowl, whisk eggs, milk, canola oil, and cream-style corn until smooth. Combine both mixtures and gently fold in cooked rice and cheese.
- Grease a cast iron skillet with butter and pour the batter evenly into it.
