  • 2 heads of cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat your oven to 500ºF (260ºC) with the rack positioned in the lower third.
  2. Remove the green leaves from the cauliflower and slice each head in half lengthwise. Cut 1 ½-inch thick steaks from each half.
  3. In a small bowl, combine salt, pepper, garlic powder, and paprika.
  4. Drizzle olive oil on both sides of the steaks and generously season them with the spice mixture.
  5. Place steaks on a baking sheet, cover with aluminum foil, and bake for 5 minutes. Then uncover and roast for an additional 16-18 minutes, flipping halfway through until golden brown.
  6. Garnish with chopped parsley before serving.
