  • 2 eggs, beaten
  • 1 ½ cups breadcrumbs (panko recommended)
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce (adjust to taste)
  • ½ teaspoon smoked paprika

Instructions

  1. In a mixing bowl, combine corned beef, sauerkraut, Swiss cheese, cream cheese, and Dijon mustard. Mix well and refrigerate for 30 minutes.
  2. Scoop the mixture into 1-inch portions and roll into balls. Place on a lined baking sheet and refrigerate until ready to cook.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Coat each ball in flour first, dip in eggs, then roll in breadcrumbs until fully covered.
  5. Heat vegetable oil in a skillet to about 350°F (175°C). Fry balls in small batches for about 2–3 minutes or until golden brown. Drain on paper towels.
  6. For the dipping sauce, mix mayonnaise, ketchup, pickle relish, hot sauce, and smoked paprika in a bowl; adjust seasoning to taste.
