Instructions
- Soak basmati rice for 30 minutes; rinse until water runs clear.
- In a heavy-bottomed pot, heat ghee and sauté half of the sliced onions until golden. Add cashews until golden brown.
- Stir in cubed potato, cauliflower, carrots, and green beans; sauté for about 5 minutes.
- Mix in crushed ginger, garlic, and green chilies; cook until fragrant.
- Combine soaked rice with spices and yogurt mixture; gently mix to avoid breaking rice grains.
- Layer carefully with water and cover; reduce heat to low for 20-25 minutes until water is absorbed.
- Let it rest covered for 10 minutes before fluffing with a fork.
