Ingredients
- 1 lb hot Italian sausage
- 1 small yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 4–6 garlic cloves, minced
- 28 oz crushed tomatoes
- 14.5 oz fire-roasted diced tomatoes
- 3/4 cup uncooked long grain white rice
- 6 cups low sodium beef broth
- Freshly grated Parmesan cheese
Instructions
- In a large soup pot over medium-high heat, brown the sausage and onions for about 4 minutes.
- Add bell peppers, garlic, and red pepper flakes; sauté until meat is cooked through.
- Drain excess grease and add crushed tomatoes, diced tomatoes, rice, and beef broth. Stir well.
- Bring to a boil, then reduce heat and simmer covered for about 8–12 minutes until the rice is tender.
- Stir in Parmesan cheese and season to taste before serving with shredded mozzarella on top.
