  • 1 lb hot Italian sausage
  • 1 small yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 46 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 14.5 oz fire-roasted diced tomatoes
  • 3/4 cup uncooked long grain white rice
  • 6 cups low sodium beef broth
  • Freshly grated Parmesan cheese

Instructions

  1. In a large soup pot over medium-high heat, brown the sausage and onions for about 4 minutes.
  2. Add bell peppers, garlic, and red pepper flakes; sauté until meat is cooked through.
  3. Drain excess grease and add crushed tomatoes, diced tomatoes, rice, and beef broth. Stir well.
  4. Bring to a boil, then reduce heat and simmer covered for about 8–12 minutes until the rice is tender.
  5. Stir in Parmesan cheese and season to taste before serving with shredded mozzarella on top.
