- 200g fresh pineapple chunks
- 1 small shallot
- Juice of 1 lime
- 1 ripe avocado
- 8 small corn or flour tortillas
- 2 tbsp chipotle paste
- 2 tbsp runny honey
- 1 1/2 tsp tomato puree
- 1 tsp salt
- 2 large garlic cloves
Instructions
- Whisk marinade ingredients in a medium bowl; toss chicken until well coated.
- Preheat oven to 200°C (400°F). Spread marinated chicken on a baking tray and top with pineapple.
- Roast for 30 minutes or until chicken is cooked through.
- While cooking, chop shallots and cube avocado. Warm tortillas if desired.
- Once done, squeeze lime juice over the tray and toss ingredients with shallots. Serve warm with avocado.
