Ingredients

  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 lb boneless, skinless chicken breasts
  • Fresh basil, salt, and pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Italian seasoning, salt, and pepper for the sauce.
  3. Toss tomatoes and mozzarella in another bowl; season with salt and pepper.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper.
  5. Sear chicken for 1-2 minutes on each side until golden brown. Pour sauce over the chicken and simmer briefly.
  6. Add the tomato and mozzarella mixture on top of the chicken.
  7. Bake uncovered for 18-23 minutes until chicken is cooked through (165°F). Let rest for 5 minutes before serving.
