  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Fresh basil (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper.
  3. Toss grape tomatoes and mozzarella balls in a separate bowl with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (5-7 minutes per side).
  5. Pour the balsamic sauce over the chicken and let it simmer for 1-2 minutes.
  6. Layer the tomato mixture on top of the chicken.
  7. Bake uncovered in the preheated oven for 18-23 minutes until chicken reaches an internal temperature of 165°F (74°C).
  8. Let rest for 5 minutes before serving.
