- 6 cups Sugar (divided)
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Walnuts or Pecans (chopped)
Instructions
- Lightly grease a 9×13-inch baking dish.
- In a heavy saucepan, melt 2 cups of sugar over low heat for about 20 minutes until fully liquefied.
- In a large saucepan, combine the remaining 4 cups of sugar with the heavy cream. Simmer on low heat.
- Once the first batch of melted sugar is ready, pour it into the cream mixture while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat; stir in baking soda, butter, and vanilla extract until smooth.
- Allow the mixture to rest for about 20 minutes before adding nuts.
- Transfer to the prepared baking dish and let cool for 1-2 hours before slicing.
