Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat cream cheese and powdered sugar until light and creamy.
- Add pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon; mix until combined.
- Stir in the remaining graham cracker crumbs.
- Cover and refrigerate the mixture for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Scoop about 1 tablespoon of dough to form balls and place on the prepared baking sheet.
- Refrigerate again for at least another 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl; dip each chilled ball into the melted chocolate.
- Drizzle any remaining chocolate over the balls and chill again until set.
