  • 1/2 cup all natural creamy almond butter
  • 1/4 cup maple syrup
  • 1 1/4 cup oat flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup shredded carrots
  • 1/2 cup white chocolate chips
  • 1 tbsp coconut oil
  • walnuts
  • raisins
  • cinnamon

Instructions

  1. In a mixing bowl, combine almond butter, maple syrup, cinnamon, nutmeg, and ginger. Mix until smooth.
  2. Stir in oat flour and shredded carrots until well combined.
  3. Roll the mixture into balls using a cookie scoop or tablespoon and place on a lined baking sheet. Freeze for 10 minutes.
  4. Melt white chocolate with coconut oil in a microwave-safe bowl.
  5. Dip each ball into the melted white chocolate and return to the baking sheet. Freeze again for 1-3 minutes.
  6. Drizzle more melted white chocolate over each bite and add walnuts or cinnamon as toppings.
  7. Freeze for an additional 15 minutes before serving.
