- 1¼ lbs boneless skinless chicken breasts

- 2 tablespoons low-sodium soy sauce
- 4 cups sliced green cabbage
- 1½ cups sliced shitake mushrooms
- 2 large eggs
- 3 tablespoons vegetable oil
- 1 tablespoon rice vinegar
- 2 cloves minced garlic
- 1 tablespoon grated ginger
- 2 teaspoons cornstarch
- 1 teaspoon sesame oil
- ½ teaspoon freshly ground black pepper
- 2 tablespoons mirin
Instructions
- In a bowl, whisk together hoisin sauce, soy sauce, rice vinegar, minced garlic, grated ginger, cornstarch, sesame oil, black pepper, and mirin. Reserve ½ cup for later.
- Marinate the chicken in the remaining mixture for 10-15 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Cook the marinated chicken until browned (about 2-3 minutes per batch). Set aside.
- Stir-fry mushrooms in the same skillet until browned; remove and set aside.
- Scramble beaten eggs in the skillet until fully set; cut into strips.
- Sauté sliced cabbage until slightly wilted; return chicken, mushrooms, and egg to the skillet.
- Drizzle with reserved marinade and stir until heated through.
