  • 225 g (1 3/4 cups) plain/all-purpose flour (sieved)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 170°C (325°F) and grease and line a loaf tin with parchment paper.
  2. Sift flour, baking powder, and salt into a bowl.
  3. In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  4. Gradually add the beaten eggs, mixing on low speed. If curdling occurs, add a spoonful of flour.
  5. Mix in half of the milk and half of the sifted flour until combined; then add the remaining milk and fold in the rest of the flour.
  6. Pour the batter into the prepared loaf tin and bake for 60–65 minutes or until a skewer comes out clean.
  7. Allow cooling in the tin before transferring to a wire rack.
