Instructions

  1. Prepare the roux: In a large pot, mix flour and oil over medium heat. Stir constantly for 20–30 minutes until deep brown.
  2. Sauté vegetables: Add bell pepper, celery, onion, and garlic to the roux. Cook until softened.
  3. Add sausage and seasonings: Mix in the sliced sausage along with bay leaves and Cajun seasoning; cook until browned.
  4. Incorporate stock: Pour in the stock and optional tomatoes; bring to a boil then lower to simmer for about 45 minutes.
  5. Add okra (if using): Stir in fresh okra or filé powder; simmer for an additional 10 minutes.
  6. Mix in seafood: Add shrimp and crab; cook until shrimp is pink (about 5–7 minutes).
  7. Final touches: Stir in Worcestershire sauce and adjust seasoning with salt and pepper before serving over cooked rice.
