Description

Ingredients

  • 20 oz frozen peas
  • 1 cup chopped sweet onion
  • 2 hard-cooked eggs, chopped
  • 2 mini sweet peppers, chopped
  • 1 cup shredded Irish cheese (Dubliner recommended)
  • 1/4 cup light mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons sweet pickle relish
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon spicy brown mustard
  • 1.5 tablespoons mixed fresh tarragon, thyme, and basil

Instructions

  1. Thaw the peas in a large mixing bowl with cool water. Stir occasionally.
  2. Soak chopped onions in water for 15 minutes; drain both peas and onions well.
  3. Combine peas and onions with remaining salad ingredients in the mixing bowl and toss gently.
  4. In a separate bowl, mix dressing ingredients until combined; pour over salad and fold gently until coated.
  5. Cover and refrigerate until serving.
