  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 4 celery stalks, chopped
  • 4 whole carrots, peeled and chopped
  • 1/2 onion, diced
  • 2 cups egg noodles
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 2 cups water

Instructions

  1. In a large stock pot, combine chicken breasts, chicken broth, celery, carrots, and onions.
  2. Bring to a boil over high heat; reduce heat and cover to simmer until chicken is fully cooked (20–30 minutes).
  3. Remove the chicken, shred it with forks, and return to the pot.
  4. Stir in thyme leaves, garlic, salt, pepper, bay leaves, egg noodles, and water.
  5. Cook on medium-high heat for about 10 minutes until noodles are tender.
  6. Remove bay leaves before serving warm.
