  • 1/4 cup sour cream
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 avocado (sliced or mashed)

  • Green onions (chopped, for garnish)

Instructions

  1. In a bowl, combine shrimp with olive oil, paprika, garlic powder, salt, pepper, and optional cayenne. Toss to coat.
  2. In another bowl, mix corn, red onion, jalapeño (optional), cilantro, lime juice, and salt; set aside.
  3. Preheat grill to medium heat and cook shrimp for 2-3 minutes per side until pink and opaque.
