  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook the rigatoni in salted boiling water until al dente. Reserve ½ cup of pasta water, drain, and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with salt, pepper, and Italian seasoning. Cook until golden brown (5-7 minutes). Remove from skillet.
  3. Melt butter in the same skillet, sauté minced garlic for about 30 seconds, then add chicken broth and simmer for 2 minutes.
  4. Stir in heavy cream and let simmer for 3-4 minutes until slightly thickened. Add Parmesan cheese and mix until smooth.
  5. Return chicken to the skillet, add rigatoni, and toss until fully coated in the sauce. Simmer for another 1-2 minutes.
  6. Serve warm garnished with fresh parsley and extra Parmesan.
