  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 225 g dark chocolate (chopped)
  • 56 g butter
  • 2 large eggs
  • 100 g granulated sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) or 170ºC (338ºF) for conventional ovens. Line a baking tray with parchment paper.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth, then add vanilla extract.
  3. In another bowl, whisk eggs, granulated sugar, and Demerara sugar on high speed until thick and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt in a separate bowl; mix in chocolate chips.
  5. Gently fold melted chocolate mixture into the egg mixture. Then fold in dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray, leaving space for spreading. Bake for 12-14 minutes until set with crackly tops.
  7. Sprinkle with sea salt if desired and let cool on the tray for about 10 minutes before transferring to a cooling rack.
