  • 1 head cauliflower
  • 3 large carrots
  • 1 can chickpeas
  • 1 sweet potato
  • 1 cup Greek yogurt (or plant-based yogurt)
  • ¼ cup tahini
  • Olive oil
  • Spices: garlic powder, oregano, paprika, ground cumin, salt, black pepper
  • Fresh parsley and lemon juice for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. On one sheet, spread cauliflower florets and carrot rounds. Drizzle with olive oil and season with garlic powder, oregano, paprika, cumin, salt, and pepper. Roast for 25 minutes; add lemon juice and parsley before returning for another 5-10 minutes until golden.
  3. On the second sheet, toss drained chickpeas and diced sweet potatoes in olive oil and spices. Roast for 20-28 minutes until golden.
  4. For the tahini yogurt dressing, blend yogurt, tahini, lemon juice, olive oil, garlic, cumin, and salt in a food processor until smooth.
  5. Assemble the bowl by layering tahini sauce with roasted vegetables and chickpeas. Add optional toppings as desired.
