  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or substitute olive oil)
  • 1/4 teaspoon freshly-cracked black pepper
  • 1 whole head garlic
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 450F and place a large roasting pan inside.
  2. Boil peeled and cut potatoes in salted water until fork-tender, about 25 minutes. Drain and let dry.
  3. Remove the hot roasting pan and add duck fat; allow it to melt.
  4. Shake the dried potatoes in a colander to roughen their edges before adding them to the pan.
  5. Season with salt and pepper, add the garlic head cut-side down, and roast for 55-60 minutes, tossing every 20 minutes until crispy.
  6. Mash roasted garlic with rosemary and olive oil, then mix with potatoes before returning them to the oven for an additional 5 minutes.
