  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon thyme
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a large skillet with olive oil until golden brown (4-5 minutes per side). Set aside.
  2. In a medium saucepan, boil chicken broth with salt. Add rice and simmer for 15–18 minutes until tender; fluff with a fork.
  3. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour until golden brown before gradually adding milk and broth to create a smooth sauce. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until thickened.
  4. Return the chicken to the skillet, spoon sauce over it and cover; simmer on low heat for 10 minutes.
  5. Serve over the fluffy rice garnished with fresh parsley.
