Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1½ cups almond flour
- 1 teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 tablespoon olive oil, plus extra for cooking
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together 1 cup of cottage cheese and 2 large eggs until smooth.
- Add 1½ cups of almond flour, 1 teaspoon of baking powder, ¼ teaspoon each of garlic and onion powders, along with salt and pepper to taste. Stir until you get a thick batter.
- Preheat a non-stick skillet over medium heat and lightly coat it with olive oil.
- Scoop about ¼ cup of the batter into the skillet and spread it into a round shape using a spatula.
- Cook each side for 3-4 minutes until golden brown, adding more olive oil as needed between batches.
- Repeat with the remaining batter.
