  • 1 cup cottage cheese
  • 2 large eggs
  • 1½ cups almond flour
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil, plus extra for cooking
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together 1 cup of cottage cheese and 2 large eggs until smooth.
  2. Add 1½ cups of almond flour, 1 teaspoon of baking powder, ¼ teaspoon each of garlic and onion powders, along with salt and pepper to taste. Stir until you get a thick batter.
  3. Preheat a non-stick skillet over medium heat and lightly coat it with olive oil.
  4. Scoop about ¼ cup of the batter into the skillet and spread it into a round shape using a spatula.
  5. Cook each side for 3-4 minutes until golden brown, adding more olive oil as needed between batches.
  6. Repeat with the remaining batter.
