  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • 1/3 cup chopped fresh cilantro
  • 3/4 cup Cotija cheese (or substitute)
  • Dressing: avocado oil
  • lime juice
  • red wine vinegar
  • honey
  • Dijon mustard
  • salt
  • dried parsley
  • black pepper
  • cumin
  • garlic powder
  • chili powder

Instructions

  1. Boil water in a large pot. Add corn and cook for about 5 minutes until tender. Cool and cut kernels off the cob.
  2. While cooling, chop bell peppers, cucumber, red onions, halve cherry tomatoes, and chop cilantro.
  3. In a large bowl, combine corn kernels and chopped vegetables.
  4. In a separate bowl or jar, whisk together dressing ingredients until smooth.
  5. Pour dressing over the salad mix; toss gently to combine. Serve chilled or refrigerate until ready to serve.
