Ingredients
- 3 overripe mashed bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 1/2 cups all-purpose flour (regular or gluten-free)
- 2 tbsp cinnamon
- Light brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a mixing bowl, combine the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract. Whisk until smooth.
- In another bowl, mix together baking powder, baking soda, cinnamon, salt, flour, and oats until well blended.
- Gradually fold the dry mixture into the wet ingredients until just combined; lumps are okay.
- In a small bowl, prepare the cinnamon filling by mixing melted vegan butter with brown sugar and cinnamon.
- Pour half of the batter into the loaf pan. Add half of the cinnamon mixture over it, then layer with remaining batter and top with the rest of the cinnamon mixture.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
