  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • Ganache: 6 oz semi-sweet chocolate (chopped), 1/4 cup heavy cream

Instructions

  1. Prepare 12 baking cups or small springform pans.
  2. Mix graham cracker crumbs and melted butter; press into cups and chill.
  3. Melt semi-sweet chocolate in a microwave-safe bowl; cool slightly.
  4. Whisk cream cheese, powdered sugar, and vanilla until smooth; blend in heavy cream.
  5. Fold melted chocolate into two-thirds of the mixture; spread over crust.
  6. Mix remaining filling with peanut butter; layer on top of chocolate layer.
  7. Prepare ganache by melting chocolate with heavy cream; spoon over cheesecakes.
  8. Garnish with chopped peanuts and mini chocolate chips; chill before serving.
