  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt

  • 1 1/2 cups heavy whipping cream, chilled
  • 8 oz semisweet chocolate, finely chopped
  • 3 tbsp milk
  • 2 tbsp powdered sugar
  • 4 oz semisweet chocolate, finely chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine melted butter and sugar until blended. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  2. In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually fold this mixture into the wet ingredients until just combined.
  3. Pour the batter into a greased 9×13 inch baking pan and spread evenly. Bake for 20–25 minutes or until a toothpick inserted comes out clean. Let cool completely.
  4. For the mousse, melt the semisweet chocolate with milk in a double boiler or microwave until smooth. Let it cool slightly.
  5. Whip heavy cream until soft peaks form and gently fold in the melted chocolate until fully integrated.
  6. Spread the mousse over the cooled brownies and refrigerate for at least three hours before serving.
