  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add ground beef and diced onion; cook until beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for another 30 seconds.
  3. Add beef broth, Rotel tomatoes, and tomato paste; bring to a boil. Stir in dry rice and return to a boil.
  4. Cover skillet and reduce heat to low; simmer for about 15 minutes until rice is tender.
  5. Sprinkle shredded cheese on top; cook for an additional 5 minutes until melted.
