Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a mixing bowl, combine melted butter and brown sugar; whisk in the egg and vanilla until smooth.
- In another bowl, mix flour, cinnamon, baking powder, and salt. Gradually add to the wet ingredients and fold in shredded carrots.
- Pour the batter into the pan and bake for about 40 minutes or until a toothpick inserted comes out clean.
- While cooling, prepare the cream cheese frosting by mixing all frosting ingredients until smooth.
