  • ¾ cup unsalted butter
  • ¾ cup sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 11/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate, chopped or in morsels (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. Melt the semisweet chocolate and butter in a saucepan over low heat until smooth; let cool slightly.
  3. In a bowl, whisk together flour, cocoa powder, and salt.
  4. In another mixing bowl, combine the melted chocolate mixture with sugars. Add eggs one at a time and vanilla; mix well.
  5. Gradually fold in the dry ingredients until just combined.
  6. Pour batter into the prepared pan and bake for about 30 minutes or until a toothpick comes out mostly clean. Allow cooling completely on a rack before cutting into squares.
  7. For ganache, heat heavy cream until simmering and pour over chopped chocolate; let sit briefly then stir until smooth.
  8. Dip brownie pieces into ganache or spread on top; sprinkle with Fleur de sel.
