  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups plain unsweetened rice milk
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Sauté the chopped onions and garlic until soft and fragrant (about 5-7 minutes).
  3. Stir in the flour to create a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring to a boil, then reduce heat and add broccoli and carrots; cook until tender (about 10 minutes).
  6. Stir in vegan cheddar cheese until melted.
  7. Blend part of the soup for creaminess, then return to pot.
  8. Season with salt and pepper before serving.
