  • 1 (12 fluid ounce) can corn (drained or fresh corn)
  • 12 tablespoons chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • Salt & pepper to taste
  • 1/4 cup olive oil
  • 2 tablespoons lime juice + zest of 1 lime
  • 1 teaspoon honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Cook the rice according to package instructions and let it cool.
  2. In a small bowl, whisk together the dressing ingredients until fully combined.
  3. In a large mixing bowl, combine the cooled rice, diced avocado, black beans, corn, red onion, and cilantro.
  4. Pour the dressing over the mixture and season with salt and pepper. Toss gently to combine.
  5. Chill in the refrigerator for at least one hour before serving.
