Ingredients

- 1 (12 fluid ounce) can corn (drained or fresh corn)
- 1–2 tablespoons chopped red onion
- 2 tablespoons chopped fresh cilantro
- Salt & pepper to taste
- 1/4 cup olive oil
- 2 tablespoons lime juice + zest of 1 lime
- 1 teaspoon honey
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
Instructions
- Cook the rice according to package instructions and let it cool.
- In a small bowl, whisk together the dressing ingredients until fully combined.
- In a large mixing bowl, combine the cooled rice, diced avocado, black beans, corn, red onion, and cilantro.
- Pour the dressing over the mixture and season with salt and pepper. Toss gently to combine.
