  • 4 cups rhubarb (cut into 1/2" chunks)
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the rhubarb, granulated sugar, flour, and cinnamon. Toss until well-coated and transfer to an 8×8” baking dish.
  3. In another bowl, mix the flour, oats, and brown sugar for the topping. Add melted butter and mix until crumbly.
