Ingredients
- 2 medium sweet potatoes
- 1 pound boneless skinless chicken breasts
- 1 large yellow onion
- 1 medium head broccoli
- 1/2 cup BBQ sauce (divided)
- 1 Tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop sweet potatoes into 1/2" chunks. Chop the onion into 1-inch pieces. Toss both with olive oil, salt, garlic powder, and chipotle powder on a lined sheet pan.
- Bake for 20 minutes. Add chopped broccoli and push sweet potatoes to one side. Place chicken breasts on the other side and brush with BBQ sauce. Bake for an additional 15-20 minutes until chicken is cooked through.
- Shred the chicken in the pan and mix with remaining BBQ sauce. Serve in bowls.
