  • 68 chicken drumsticks
  • 3 Tablespoons olive oil
  • 2 Tablespoons brown sugar
  • 1 Tablespoon smoked paprika
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 and 1/2 teaspoons kosher salt (divided)
  • 1520 cranks fresh-ground black pepper
  • 2 Tablespoons butter
  • 1/2 medium yellow onion (chopped)
  • 34 cloves garlic (minced)
  • 1 cup uncooked white rice
  • 1 and 1/3 cups chicken broth (low-sodium preferred)
  • 2/3 cup water
  • 1 lemon (cut into wedges)
  • fresh parsley or thyme (optional garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix olive oil, brown sugar, smoked paprika, dried thyme, oregano, garlic powder, salt, and pepper. Rub over the chicken drumsticks.
  3. Sauté chopped onions in butter until softened; add minced garlic.
  4. Combine uncooked rice with sautéed mixture in a baking dish.
  5. Boil chicken broth and water; pour over the rice.
  6. Arrange marinated chicken on top with lemon wedges. Cover tightly with foil and bake for 30 minutes.
  7. Remove foil and bake for another 20 minutes until chicken is fully cooked.
